A comfort during an uncertain time

How do I know Fall is here? I wake up every morning with a sinus headache. My nose is dripping every time I tilt my head forward. I see pumpkin spice everywhere. And when I walk outside to my backyard and I see leaves…. lots and lots of leaves.

Stevie had a blast chasing leaves around in the backyard, but all I saw was yard work and I hate yard work. So, I said F yard work, it’s Pot Roast time!!

- 3 lbs boneless chunk roast. Dry both sides with paper towel.
- 2 medium size tomatoes
- 1 yellow onion
- 2 carrots
- 2 golden potato
- 2 dried chili peppers
- 1 bay leaf
- 1/4 cup cooking wine or red wine
- 1/4 cup soy sauce
- 2 tablespoons Worcestershire sauce
- 1 teaspoon Oregano
- salt and pepper for seasoning
- 1 tablespoon vegetable oil

Preheat the oven to 300 degree F. Cleaned and diced all the vegetable into large pieces. I like to leave the skin on my potato. I like the extra texture and extra nutrients. I also roll cut the carrots so it would absorb more flavor during cooking.

Heat a large pan on the stove. Season both side of the beef chuck well with salt and pepper. Add 1 tablespoon vegetable oil. Hot pan, cold oil to prevent sticking. Pan sear the chuck roast for about 3 minutes each side or until it’s golden brown on both sides. Remove the beef chunk and place it in a large baking dish. Make sure the baking dish is deep enough as more liquid will come out during baking process.

In the same cooking pan. Cook all the vegetable in the pan for two minutes then add the rest of the ingredients. Scrape up all the brown goodness from the bottom of the pan. This is a good time to clean up the pan as well.

Pour all the vegetables along with the sauce over the meat in the baking dish. Cover with aluminum foil and bake in the oven for 1.5 hours. Remove the foil, then bake for another 1.5 hours. I normally put the baking dish on a large baking tray in case the sauce boils over and messes up the oven during the cooking process. It is much easier to clean a baking tray than cleaning a burning hot oven.
